Cups measure volume, grams measure truth
A cup of flour weighs 120 g scooped gently — or 150 g packed, a 25% swing that ruins bread. Density differs per ingredient (a cup of honey is nearly 3× flour's weight), so each needs its own conversion, and serious baking recipes specify grams.
Scale up your accuracy
A $15 kitchen scale removes the ambiguity: zero the bowl, pour to the number. Where cups persist, technique matters — spoon flour into the cup and level it; never scoop-and-shake, which compacts it.
