Two dice make 36 equally likely ordered pairs. Seven wins with six of them (1+6 through 6+1) — a 16.7% chance — while 2 and 12 have one way each. The triangle of ways (1,2,3,4,5,6,5,4,3,2,1) is the whole distribution.
Why 7 rules the table
Craps is built on 7's dominance: it's the most likely sum on any roll, which is why it wins come-out rolls and busts points later. Adding more dice bells the curve further — the central limit theorem starting its work.
